Echinacea is a perennial also known as 'Cone Flower' and provides a substantial bloom that offers a meadow-feel in bouquets and your garden. They also dry beautifully. Echinacea will bloom throughout Dahlias season if you keep harvesting it - it will peak in the earlier part of Dahlia season and you can either continue harvesting for more fresh blooms, or let the cones age on the plants for a textural element in your bouquets (I do this).
